Initiating Cookstove Construction

With students spectating and giggling outside of the school kitchen, I started constructing the stove, sweating and slightly nervous as this was the first stove I had constructed since my Pre-Service Training.

Volunteer Justin helped make a series of fuel-efficient cookstoves to introduce them to community members.

Using these stoves, he held nutrition sessions and food-cooking demonstrations to help his Wildlife Club and a group of farmers understand why maintaining good nutrition is important and how these nutrients can be obtained. Amazing work!

When I chose my preference for the region I wanted to go to for Peace Corps, I knew that I wanted to be somewhere where I would look different.

“Now, I’m not white or Asian or Filipino, I’m just another community member,” says Andrew Datu, an Education Volunteer in Malawi. 

Apply by July 1st, and you could begin serving in Malawi as soon as June 2018!

Food Friday: Mbatata Cookies (Malawi)

Cookie Monster told us that cookies are a “sometimes food”, and if you end up serving as a Community Health Specialist in Malawi, these sweet potato cookies will probably be a nice treat, sometimes. 

Ingredients

Preparation

  1. Preheat oven to 375 °F.
  2. Mix sweet potatoes, milk, and melted margarine and beat well.
  3. Sift and stir in the remaining ingredients.
  4. Turn onto a floured board, knead lightly and roll out ½ an inch thick.
  5. Cut with a cookie cutter.
  6. Place cookies on a greased baking sheet, and bake for 15 minutes.
  7. Sprinkle some cinnamon/sugar mixture on top.
