“This photo is of the children I worked with at my local community center, eating a lunch that resulted from the community centers new kitchen which was constructed thanks to a SPA grant. The children are from a poor community in Paraguay and come to the community center for homework help, presentations, and recieve lunch twice a week thanks to the hard working mothers of the community. 400 children are now provided with lunch twice a week thanks to the new kitchen and to the hard working group of women that made it possible by obtaining the kitchen equipment and food donations. This picture shows the happy children whose tummies are now filled thanks to the help of SPA.”

The area that is now Senegal was once a part of the Western African Empire of Mali, Ghana, and Tekrur. The Wolof people state that the name comes from the local term “Sunugal” or “our dugout canoe” (everyone is in the same boat). The common food is rice or couscous with a spicy sauce and veggies, or “chep.”

Here is our favorite Malagasy Health PTA from Peace Corps at STOMP Boot Camp here in Thies! Commonly, Senegalese meals are served on a mat out of a communal dish. Things I’ve learned? Only eat with your right hand, eat what’s in front of you, and don’t put your feet on the mat.
